Last year was the first time I decided to tackle corned beef and cabbage for St. Patrick's Day. I know not everybody likes this dish, but if you do, this recipe couldn't be easier or tastier! I served it with boiled potatoes and mustard (for dipping). This got rave reviews for the second year in a row.

Crockpot Corned Beef and Cabbage

4 ½ lbs corned beef
2 onions, quartered
1 head cabbage, in small wedges
½ teaspoon pepper
3 tablespoons vinegar
3 tablespoons sugar
2 cups water
Combine ingredients in crockpot with cabbage on top. Cut meat to fit, if
necessary. Cover and cook on low 10-12 hours; high 6-7 hours or auto 6-8
