I had some leftover brown rice, so I decided to make a quick fried rice. I used leftover veggies - some shredded carrots, green onions, and some frozen peas. I threw in garlic and ginger, a block of tofu (cubed) and 3 eggs. I used a mix of soy sauce and cornstarch for the sauce, and dinner was ready! It turned out pretty good for a quick meal.
