I put in a request to my friends over at the CLBB to find out if anyone had a recipe similar to one that I had out at a Brazilian BBQ restaurant last month. It was a bean salad and it was so tasty! So this recipe was one of the responses. It wasn't exactly like the one that I had at the restaurant, but WOW!! It's so good! It made a ton, but we managed to eat it all in 2 days (I had it with lunch and dinner on the second day). There was a lot of dressing, and it was very sweet, so next time I'd probably cut the dressing in half (or double the beans!) and reduce the sugar a little bit. This one is going into my regular rotation for sure!

3 Bean Salad
CLBB gigicancook
1 can green beans
1 can wax beans
1 can kidney beans
½ cup chopped onions
½ cup chopped green pepper
Dressing
½ cup salad oil
½ cup red wine vinegar
¾ cup sugar
a tsp. of salt
Drain the beans and mix together with the onions and peppers. Prepare the dressing in a seperate bowl or jar. Toss everything together and refrigerate, covered.
