I made another farro salad using the same vinaigrette from Cooking Light. This time, I used Greek inspired mix-ins. It was awesome!
This time, I added 1/2 teaspoon freshly ground black pepper to the vinaigrette. Here's what I added to the farro:
1/2 English cucumber, halved and sliced
1/2 red onion, sliced
2 tomatoes, seeded and diced
2T fresh dill, chopped
2T fresh parsley, chopped
1 can chickpeas, rinsed and drained
feta cheese crumbles
I swear, this vinaigrette is great on EVERYTHING!
