I saw an episode of 30-Minute Meals where Rachael made an egg dish that inspired me to use what I had on hand. I scrambled 2 eggs with some chives and parsley from my herb garden, one of the 3/4 oz. pieces of Swiss Laughing Cow cheese, red onion, frozen peas, salt and pepper. It was delicious and very different for a breakfast. Yum!
