This stew is based on the one that my Grandpa used to make. My mom changed some things, and then I changed some things, too. Grandpa put corn and cabbage in it. Dino asked for peas, and I love peas, so I added them this time. It was probably the best I've ever made it this time around. Perfect comfort food!

Beef Stew
Adapted from Grandpa
3 potatoes, diced
2 green bell pepper, diced
5 carrots, sliced
2 medium onions, diced
3 stalks celery, sliced
2-3 pounds beef stew meat, cubed
1 cup barley
2 tablespoons olive oil
32 ounce jar tomato juice
32 ounce box low sodium beef broth
¼ cup ketchup
1 tablespoon Worcerstershire sauce
½ teaspoon garlic powder
2 tablespoons brown sugar
½ teaspoon black pepper
10 dashes hot sauce
1 tablespoon dried parsley
2 cups frozen peas
Brown Meat in Olive oil. Add rest of ingredients except for potatoes and barley. Simmer, covered for 2 hours. Add potatoes and barley and simmer, covered for another hour. Add peas during last 10 - 15 minutes.
