We took the day off work today, and Dino made an awesome brunch! We had seen Eggs Oscar at a local diner, so he decided to make them, plus mimosas. Dee-licious!
4 slices Canadian bacon, pan-fried
12 spears asparagus, trimmed, then pan-fried and steamed
4 English muffins, split and toasted
4 eggs, poached
Hollandaise sauce mix, prepared according to package directions
Assemble by placing the English muffin halves on a plate, top with Canadian bacon, asparagus spears, and egg. Drape Hollandaise sauce over top. Enjoy!
