Favorite Griddle Cakes

Dino found a new pancake recipe today, and it's now going to be our go-to recipe! I asked him to make pancakes like the ones we saw on a show a few weeks ago - where they added bananas and chocolate chips to the batter while they were on the griddle. They turned out amazing! It's definitely a decadent breakfast, and we loved it!

Favorite Griddle Cakes

1 ¼ cup all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
½ teaspoon salt
1 large beaten egg
1 cup milk
2 tablespoons melted butter or margarine

1. Mix flour with baking powder, sugar, and salt.
2. Combine egg, milk, and butter. Add to dry ingredients, stirring just until combined; do not over mix. Batter will be lumpy.
3. Heat a lightly greased griddle or skillet over medium heat (375*F - 190*C). Griddle is ready when a few drops of water bubble and skitter rapidly around.
4. For each pancake, pour scant 1/4 cup batter onto hot griddle. Cook pancakes until surface is covered with bubbles and appear dry around the edges. Turn and cook other side until golden brown.

Makes about 12 (4-inch) pancakes.
