I like making corned beef and cabbage once a year and only once. It's often enough for me to eat it and still enjoy it. I found this recipe 3 years ago and it's been a St. Patrick's Day tradition ever since. This year I made mashed potatoes to go with it, and as always, served some spicy mustard alongside.
Crockpot Corned Beef and Cabbage

4 ½ lbs corned beef
2 onions, quartered
1 head cabbage, in small wedges
½ teaspoon pepper
3 tablespoons vinegar
3 tablespoons sugar
2 cups water
Combine ingredients in crockpot with cabbage on top. Cut meat to fit, if
necessary. Cover and cook on low 10-12 hours; high 6-7 hours or auto 6-8
hours.
