Grandpa Henderson's Beef Stew

This is my version of my Grandpa's beef stew. It's the perfect winter comfort food. It will make your house smell wonderful all day, but it's definitely worth the wait. Grandpa used to add cabbage and corn sometimes to his stew - I add peas. This makes a ton of soup, so be sure to use your biggest pot. It's sure to be a crowd pleaser!



Grandpa Henderson's Beef Stew

2-3 pounds beef stew meat, cubed
2 tablespoons olive oil
2 green bell peppers, diced
5 carrots, sliced
2 medium onions, diced
3 stalks celery, sliced
32 ounce jar tomato juice
32 ounce box low sodium beef broth
¼ cup ketchup
1 tablespoon Worcerstershire sauce
½ teaspoon garlic powder
2 tablespoons brown sugar
½ teaspoon black pepper
10 dashes hot sauce
1 tablespoon dried parsley
3 potatoes, diced
1 cup barley
2 cups frozen peas

Brown Meat in Olive oil. Add ingredients through parsley. Simmer, covered for 2 hours. Add potatoes and barley and simmer, covered for another hour. Add peas during last 10 - 15 minutes. This is especially good with some nice bread to dip into the juices, and it tastes even better the next day. Enjoy!
