Quick Cucumber Salad

We got some garden cucumbers from a family friend, and I decided to make a quick side salad to go with the leftover Bourbon-Mango Pulled Pork. I took about a tablespoon of honey, 2-3 tablespoons of seasoned rice wine vinegar, 1/2 teaspoon of sesame oil, and a pinch of kosher salt and whisked it together in a bowl. I added some thick sliced cucumber and thinly sliced shallot and tossed it together. It was light and refreshing, and a good way to cool your mouth off after a spicy sandwich!
