My latest juice idea was carrot beet. I used almost 5 pounds of carrots, and added 4 or 5 beets that I had boiled and removed the skins from for the pickled beets and eggs that I made the same day. This juice was wonderful - the beets added just the right amount of sweetness, and made is a beautiful color.
