I needed to make something quick for dinner tonight, and wanted something that wouldn't involve too much stove time since it's so hot outside. This is one of our favorite recipes - it's light and refreshing, and full of summery produce. The feta is a great addition on top, but if you leave it out, you have a wonderful vegan dish. Yum!
