Homemade Breakfast Sausage Patties



We had some ground pork leftover, and I thought it would be fun to try to make sausage patties to go with breakfast. I'm not a big fan of sausage usually, because a lot of them incorporate caraway or fennel seeds, and I don't really like those too much. So this was a great way to use spices that we like, and make something without a bunch of nitrates in it. Make sure you add enough salt if you want it to taste sausage-y. Otherwise it's a little bit like a pork meatball. Dino made some omelets with cheese and some tomatoes from our garden, and toasted up some wheat bread to go with this sausage. It was a really nice way to start the day.



Homemade Breakfast Sausage Patties

makes 3-4 patties

2T extra-virgin olive oil
8 oz. ground pork
1 clove garlic, minced
pinch of red pepper flakes
big pinch of kosher salt
coarsely ground black pepper
1/2 t dried marjoram
1/2 t dried oregano
1/2 t dried parsley
1/2 t paprika
1/4 t savory

Heat oil in a nonstick skillet over medium-high heat. Mix remaining ingredients in a bowl with your hands, being careful not to overmix. Form into patties, and fry on both sides, covering the skillet if you need, to ensure they cook all the way through. Enjoy!
