I made these awesome Rice and Chickpea Kale Rolls with Pineapple Salsa the other day, and they were great, but kind of a pain in the you-know-what to make as rolls. So I decided to take the leftovers and make a version that was easier to eat. I made a bed of torn kale leaves, topped them with the rice and chickpea mixture and then topped that with the pineapple salsa. It still tasted awesome and was way easier to prepare...and eat!
