This month's Supper Club theme was Rice. I saw this recipe in my Vitamix cookbook and thought it sounded awesome! It turned out OK...nothing special. I think it's a good idea, but it didn't work great as written. The top part of the crust gets too crunchy from baking without being covered. I think next time, I'd just do a bottom crust and not bring it up on the sides. I used regular milk instead of soy, and the texture of the quiche was kind of blah...but again, I think it has potential to be much better if tweaked a bit. The flavor was good, so that was a bonus.
