Peanut Butter Cookies

This is my favorite peanut butter cookie recipe - it's the one my mom made when I was growing up. I've made them several times on my own, but this time around I used dark brown sugar (the recipe doesn't specify dark/light) and I found that the cookies weren't as soft. That and using a Silpat were the only things that I did differently, so I think it was the brown sugar. They were still wonderful, and the perfect accompaniment to an ice cold glass of milk.



Peanut Butter Cookies
Mom

½ cup butter
½ cup peanut butter
½ cup sugar
½ cup brown sugar
1 egg
½ teaspoon vanilla
1 ¼ cups flour
¾ teaspoon baking soda
¼ teaspoon salt

Preheat oven to 375°. Cream butter, peanut butter, sugars, egg and vanilla. Stir in dry ingredients.

Shape into 1" balls; roll in sugar. Place 2" apart on ungreased cookie sheet. Press with fork tines. Bake 10-12 minutes.

  1. Hmmm.. I use dark brown sugar and maybe that's why I'm not as happy with my peanut butter cookies as I would like to be. PB cookies are among my favorites. I'll take a whole stack of these, a glass of milk, and see ya later!!

  2. Hey, love this recipe and am planning on making it tomorrow. But I have one question... how many grams are 1 cup butter? Please let me know as we don't use cups for butter over here in Norway.

  3. Katy - let me know if using light brown sugar ends up doing the trick next time!

    Angelica - do you have sticks of butter? 1 stick here (8 tablespoons) is 1/2 cup. So I use 1 stick in this recipe. I hope that helps. I checked Allrecipes and they say that 1/2 cup = 64 grams or 2.25 ounces. Hope you enjoy them!
