Salmon with Caramelized Balsamic Onions



I used the rest of the salmon that we had to make this dish. It wasn't as good as the other salmon that I made, but it was good. I caramelized some sliced white onion in a skillet with a little salt. Once they were nice and brown, I scooted them over to the side of the pan. I put salt and pepper and some Italian seasoning on the salmon and rubbed it in, and then seared it on both sides until it was medium-rare. I took the salmon out of the pan, spread the onions across the pan and added a few shots of balsamic vinegar and let it bubble and reduce a bit.

This turned out OK, but I think the onions would have been better on chicken or beef than on salmon.
