
Grandpa Henderson's Beef Stew
Ashley Covelli (Adapted from Roy Henderson)
2-3 pounds beef stew meat, cubed
2 tablespoons olive oil
2 green bell peppers, diced
5 carrots, sliced
2 medium onions, diced
3 stalks celery, sliced
32 ounce jar tomato juice
32 ounce box low sodium beef broth
¼ cup ketchup
1 tablespoon Worcerstershire sauce
½ teaspoon garlic powder
2 tablespoons brown sugar
½ teaspoon black pepper
10 dashes hot sauce
1 tablespoon dried parsley
3 potatoes, diced
1 cup barley
2 cups frozen peas
Brown Meat in Olive oil. Add ingredients through parsley. Simmer, covered for 2 hours. Add potatoes and barley and simmer, covered for another hour. Add peas during last 10 - 15 minutes. This is especially good with some nice bread to dip into the juices, and it tastes even better the next day. Enjoy!

ReplyDeleteYummers....nothing like a good old fashioned beef stew in the winter! That does look terrific! Too bad I have a meatloaf in the oven but maybe another night this week.
