Pork Fried Rice

I had some rice and a few pork chops leftover from when I made pizziaola, so I decided to try to make some pork fried rice. I cut the pork chops into cubes and seasoned them with salt, pepper and Chinese five spice. I stir-fried them in a large nonstick skillet coated with peanut oil, and removed them to a bowl once they were done. I added some diced onion carrot and garlic to the hot oil, then 2 beaten eggs. I stir-fried all of that until the egg was almost cooked through, and added in the leftover rice. Once that started heating up, I dropped in some frozen peas, a bit of fish sauce, and a good dose of low sodium soy sauce and mixed it all together. I put the pork back in the pan and stir-fried it until it was all heated through. I topped it with a drizzle of sesame oil, and dinner was ready. It turned out pretty tasty, and I was glad to use up a bunch of leftovers for a new dish.
