Crockpot BBQ Pulled Chicken Sandwiches



I needed to make something easy that could feed a crowd tonight, so I decided to try something in my crockpot. I put a bunch of boneless, skinless chicken breasts in the crockpot, covered them with some of my favorite BBQ sauce, and cooked it on low all day. When I got home from work, I shredded the chicken with two forks and mixed it back into the sauce until everyone arrived. I served the sandwiches inside poppy seed rolls, topped with cornichons. For side dishes, I just heated up some canned creamed corn and collard greens, and dinner was done! Super easy and tasty, and one that I'll most likely use again in a pinch. I can't say enough about Stubb's BBQ sauces - they don't pay me or give me anything to talk about them, but they really are the best BBQ sauce I've found that doesn't have added junk. It's all natural and completely delicious, and we just love it! They have a few varieties...definitely try it out if you come across it ever.

  1. I like to think that those are regular-sized pickles and that is one mother of a huge sandwich. :)
