Tonight I made another one of our favorite, simple meals -
Couscous Salad with Chickpeas. It turned out great! This one is really fast to make, and if you leave the feta out, it's vegan. It's substantial enough for a main course, and I love having vegetarian meal options like that in my repertoire.
This looks great. What do you think of using goat cheese instead of the feta. I have the goat cheese and not the feta but I would love to make this.
