Pork Chops with Mushrooms and Thyme
Those little boneless center cut pork chops are great for a quick weeknight meal. I fried some up with simply seasoned mushrooms, and served it with some spaghetti squash. I drizzled some olive oil in a pan and sauteéd 8 ounces of baby bella mushrooms, 2 cloves of minced garlic, a few dashes of Worcestershire sauce, 1 tablespoon of sherry, 1/4 teaspoon of dried thyme, salt and pepper. When they were nice and tender, I slid them to the side of the skillet and fried the pork chops, seasoned with salt and pepper. It was quick and easy and pretty good.
