These Ricotta Cookies are divine. They're light and fluffy and a real crowd pleaser. I've been making them every year for Christmas since 2008 (with the exception of last year, since I had recently had a baby!) and it's a tradition that will definitely keep on going. This recipe makes a ton - I got 7 1/2 dozen out of it - plenty to give to some of my neighbors and a lot to take with me over to my Italian in-laws' house for Christmas.
