Pulled Pork Sandwiches
Now that I have a working crockpot again, I wanted to make one of our favorite pulled pork recipes. The key to this recipe is a nice dry rub that you put on the pork and let it marinate for anywhere between 1-3 days before cooking it. The meat just falls apart, and it's great with your favorite BBQ sauce. I'm partial to Stubb's, because they use real ingredients - no junk - and every variety I've tried has been delicious. I served these sandwiches with cole slaw and chips with chunky watermelon salsa. Yum!
And of course, Dino likes to add his cole slaw on top of his pulled pork sandwiches. I guess they aren't messy enough without it for him ;)
